Simple Breakfast Omelet
serves 1
Ingredients:
1/4 cup chopped mushrooms (use your favorite)
1 Tbsp chopped green onion
1 Tbsp chopped fresh parsley
3 eggs
2 Tbsp grated white cheddar
Directions:
In a small omelet pan (or 8” frying pan), warm 1 Tbsp of the olive oil over medium heat. Saute vegetables in oil until just tender.
Beat eggs with the remaining olive oil and pour over vegetables. Let cook for 1 minute, sprinkle with cheese, and fold omelet in half.
Let cook for another minute before serving.

smoked salmon + wild dill olive oil
spinach + herbs de Provence olive oil
tomatoes + Tuscan herb olive oil
