Simple Breakfast Omelet

Ingredients:

Directions:

  1. In a small omelet pan (or 8” frying pan), warm 1 Tbsp of the olive oil over medium heat. Saute vegetables in oil until just tender.

  2. Beat eggs with the remaining olive oil and pour over vegetables. Let cook for 1 minute, sprinkle with cheese, and fold omelet in half.

  3. Let cook for another minute before serving.

peppers + chipotle olive oil

ham/prosciutto + rosemary olive oil

smoked salmon + wild dill olive oil

spinach + herbs de Provence olive oil

tomatoes + Tuscan herb olive oil
