Jammin' Tomato & Carmelized Onion Stuffed Burgers
Ingredients:
1 lb. ground meat (I love 80/20 or ground lamb for this)
1 small Vidalia onion, chopped
1 Tbsp Rosemary Olive Oil (great with garlic, olive wood smoked, Tuscan herb, or Baklouti green chili oils too!)
salt & pepper
Directions:
Saute chopped onion in olive oil until carmelized (tip: add a splash of brandy to create a rich, deep carmelized flavor). Set aside and cool.
In large bowl combine ground meat, jam, cooked onion, and spices. Mix well and form into 4 patties. Grill over charcoal approximately 4-5 minutes a side or until desired doneness.
Serve on your favorite bun with all your favorite sides. I love brioche buns or onion rolls with a side of rosemary & sea salt roasted sweet potatoes, but you do you.
